Potatoes are usually on the menu of almost every home during the week.
When people think of making potatoes they usually think of mashed potatoes, baked or cooked potatoes, which works great for an average dinner or lunch, right? But what about the special events?
When we discovered this recipe, we couldn't wait to try it. It has all the ingredients we love that help turn the humble potato into something spectacular.

You will need:
- 900g peeled Yukon gold potatoes
- 2 tablespoons melted butter
- 2 tablespoons olive oil
- 2 tablespoons fresh chopped rosemary
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup low sodium chicken broth
- Chopped garlic cloves (the quantity you choose)
Step 1:
Peel and cut the potatoes into 2-2.5cm thick slices. Then transfer to a medium bowl.
Step 2:
Cover the potato slices with the melted butter, olive oil, rosemary, salt and pepper. Stir.
Step 3:
Lay the potatoes flat on a tray. Do not use a glass tray, as pouring the chicken broth into a hot tray can crack it.
Bake in oven preheated to 260 degrees celcius for 15 minutes.
Step 4:
Remove the tray from the oven and turn the potatoes over the side. Bake for another 15 minutes, until the other side of the potato turns golden.
Step 5:
Add the chicken broth and chopped garlic. Return to the oven for an additional 15 minutes.
Serve hot with some sauce over.
