Recipe: How to make authentic Japanese pancakes

We always search for good dishes for breakfast, and this time we tried many recipes for pancakes, and one of the things we learned was that it's not easy to find a good recipe.
Most recipes become dry or thick, or too liquid, or crumble, or simply without flavor. But once we tried this recipe that we're about to share with you for Japanese pancakes, we knew we had a winner. They are so good that even american pancakes with blueberries and chocolate are a thing of the past.
These pancakes are crunchy on the outside, and fluffy and soft on the inside. Yummy!
The only "special" tool you'll need for this recipe is something you probably have in the kitchen - a cookie cutter.
You can use whatever shape you want. Want to impress a date? Use a heart shape. Celebrating someone's birthday? A star shaped cookie cutter will work wonderful.
Ingredients:
- 2 eggs
- 1.5 cups milk
- 1/2 cup sugar
- 1 teaspoon vanilla
- Pinch of salt
- 3 cups flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- Butter or oil for frying
Preparation:
1. Pour the eggs, milk, sugar, vanilla, and salt into the blender, and mix at the lowest speed for a few seconds.
2. Pour the dry ingredients into the blender and mix for 10-20 seconds until the mixture is uniform.
3. Oil the cookie cutter, and pour some oil on a pan over medium heat.
4. Place the cookie cutters on the pan, and fill them with half their height with the mixture. Fry for about 4 minutes before turning them gently and fry them for 3 more minutes on the other side.
Serve with jam, maple or Nutella!
